Design Sponge set up an adorable way to do a typical theme, the Pancake Breakfast. A great idea for a bridal shower, birthday party, baby shower or just Sunday brunch with friends. I have a feeling the pancakes might get soggy/cold if you leave them out to long so here's a suggestion: make small plain pancakes for the place cards only (not for your guests to eat), then about 30 minutes before your friends arrive, heat up the griddle and get cooking.
BLUEBERRY BUTTERMILK PANCAKES
Bon Appetit - July 2007
Preheat over to 250*F
Makes about 12 pancakes
Total time: 30 minutes
1 1/3 cups all purpose flour
3 tablespoons sugar
2 1/2 teaspoons baking powder
3/4 teaspoon salt
1 1/4 cups buttermilk
2 large eggs
2 Tbsp. (1/4 stick) unsalted butter, melted, plus more for cooking
2 cups fresh blueberries
Pure maple syrup
Preheat oven to 250*F. Place baking sheet in oven. Whisk first 4 ingredients in a large bowl. Whisk buttermilk, eggs and 2 Tbsp. butter in a medium bowl; stir into dry ingredients. Fold in berries.
Heat a large nonstick griddle or skillet over medium heat; brush with butter. Drop batter by 1/3 cupfuls onto the griddle. Cook pancakes until brown, brushing griddle with more butter as needed, about 3 minutes per side. Transfer to sheet in oven to keep warm. Serve pancakes with maple syrup.
Note: I would suggest serving these at the Pancake Breakfast but not using them for the place cards.
