TOMATO, WATERMELON AND GOAT CHEESE SALAD

Yesterday I created the most delicious salad.  It was so refreshing on a warm Northern California afternoon.  It's the perfect summer salad, and so easy to make.

TOMATO, WATERMELON, AND GOAT CHEESE SALAD

Servings: 4-6 people

1/2 small watermelon, rind removed and cut into chunks
3 medium tomatoes (heirloom or a variety of colors makes it more appealing)
2 large basil leaves, thinly sliced (chiffonade)
1/3 cup goat cheese
2 tablespoons olive oil
kosher salt, to taste

Place watermelon, tomato and basil in a large bowl.  Drizzle with olive oil.  Add goat cheese and mix lightly.  Season with salt.

Note: This dish can get soggy quickly so best to combine ingredients not long before serving.
